Expressif, sec et franc. Ce Palomino Fino de Muchada-Leclapart incarne l'essence même des sols d'albariza de Cadix. Un vin exceptionnel pour se plonger dans l'univers de ce domaine du sud particulièrement intéressant. Un petit bijou produit en quantité extrêmement limitée, puisqu'un seul fût a été élaboré pour ce millésime, donnant naissance à 280 bouteilles.

The 2023 Étoile comes from a year when all the wines from the portfolio were produced. It was produced with the grapes from 0.7 hectares in Miraflores Alta, a plot that delivers more oxidative, muscular and powerful wines. Since 2018, it has been vinified in used 225-liter French oak barrels instead of Manzanilla botas, which was the initial intention (the barrels are from 2013; they purchased them in 2017 and have used them ever since). The wine matured in those oak barrels with full lees for 11 months, as the wines are bottled before the following harvest. It has a much darker color, despite not having any skin contact; it was produced with the juice from the direct pressing, but the character of the wine is always like this, a little more oxidative, a little more Sherry if you like. It comes in at 12.5% alcohol (like the other wines, that's a full 2% more than in 2022), with a pH of 3.8 and 3.4 grams of acidity. It has balsamic and spicy flavors, a little medicinal perhaps. If the Lumière is more reductive, this is more oxidative. The lentejuela soils here have more clay, and that's what gives the wine that character. There was only one barrel, which delivered 280 bottles that were filled in July 2024.
