le 61 Dorado en Rama est un vin unique qui tire le meilleur du raisin Palomino dans l'appellation d'origine Rueda, un cépage condamné à disparaître car sa plantation est interdite, mais dont la coopérative de Laseca prend soin des ceps centenaires dans le but de perpétuer les méthodes de production traditionnelles de la région. Ce vin rappelle fidèlement le vin blanc généreux qu'il était au Siècle d'Or, étant également le vin de la Cour à l'époque des Rois Catholiques. Il n' a pas de millésime, cette sélection étant la seule mise en bouteille en 2024

Oxidative with notes of butterscotch, hazelnuts, bread dough and refreshing acidity. Layer after layer of complexity on the palate and fantastic, long finish. Very impressive.
I got an unusual bottle of the nutty and amber colored NV 61 Dorado en Rama, which clearly displays the bottling date and number of bottles on the neck label—1,100 bottles from May 2024. It has an intense nose that is expressive and redolent of a young Amontillado, with aromas or roasted nuts, a touch of varnish and some spices. The palate is very tasty, with an almost salty twist. This is a blend of Palomino Fino and Verdejo that has 17% alcohol and very good acidity (6.55 grams) and freshness (pH 3.09). It was selected from 13 Sherry barrels that are not fully topped up and are allowed to develop a thin veil of flor yeasts that dies down during the autumn and winter and allow for a slow oxidation. It's bottled unfined and unfiltered "en rama" and, therefore, is a bit cloudy. It's full of character and delicious.
An important part of the history of the winery and the region, this wine always impresses and if anything, is showing even greater finesse and elegance. It is a fabulous expression of the style with zesty citrus peel that combines with nougat, caramel and coffee notes. The woody notes from extended oak ageing are appealing, offering some woody spice and polished aromas, adding to the complexity of the wine. It is at once direct but rich, and hugely satisfying! 2026-36. (Beth Willard)
