Description
Este blanc de blancs, elaborado íntegramente con Chardonnay, nace de 14 hectáreas de viñedo clasificado como Premier Cru en el histórico pueblo de Cuis, donde la familia Gimonnet cultiva la tierra desde 1750. Es el resultado de un ensamblaje magistral de vinos de reserva que buscan la consistencia y la pureza del terruño calcáreo. Un champagne de cuerpo medio y textura cremosa, ideal para elevar tanto el aperitivo como acompañando mariscos, arroces o platos de cocina japonesa.

A toasty style with slightly nutty, singed-bread aromas plus very intense white flowers reminiscent of linden trees. Light-bodied with crisp acidity, medium-sized bubbles and a leaner finish that’s elegant and floral. Drink now.
I tasted two different versions of Gimonnet's signature NV Cuis 1er Cru Brut Blanc de Blancs earlier this year; both were excellent as usual. The most recent disgorgement from January 2015 is based on the 2011 vintage (+ 22% Réserve wines), and is very pure, lovely, fresh and delicate on the typically intense, chalky/mineral, well balanced and elegant palate. The lighthearted yet quite complex wine was disgorged with a dosage of 6.5 grams per liter. The forerunner, based on 2008 and disgorged in October 2014, was even finer and provided with a very god length.
