The rosé 2018 Pedregar was produced with Garnacha from a single 1.6-hectare plot planted in 1982 on limestone marls on a soft north-facing slope that delivers a slow ripening of the grapes. The full clusters were pressed, and the juice fermented in a 3,000-liter oak foudre and stainless steel tanks, where it matured for eight months. It then refermented in bottle with concentrated must, without cane or beetroot sugar. It stays in bottle with the lees for at least 60 months, this one for six and a half years. It has a salmon color and a vinous nose with notes of red berries, flowers and yeasts. Coming in with 12% alcohol and a pH of 2.97, it has a seamless and solid palate that is balanced, fresh and tasty, with a bone-dry, chalky finish. 9,067 bottles produced. I tasted a bottle disgorged in December 2025.
