Description

La Pretensión est un vin blanc non fortifié élaboré entièrement à partir de muscat provenant du domaine Balbaína Baja, à Jerez. Il s'agit d'un vin blanc produit en petite quantité (à peine 1 300 bouteilles) dont la particularité est qu'il est élevé dans deux fûts de cognac de 350 litres chacun, l'un avec un voile et l'autre rempli chaque semaine. Le résultat est un vin avec une forte composante agrume au nez et beaucoup de salinité au palais. Savoureux et délicat.

Bouche
Il présente un profil minéral, une tension marquée et un caractère phénolique granuleux-sableux. Très salin.

Vignoble et élaboration

Vendanges
Vendange manuelle en plusieurs passages.
Vinification
Fermentation avec les peaux et 20 % des rafles pendant 2 semaines. Extraction douce avec des pigeages courts. Extraction à 60 % à l'aide d'un pressoir.
Elevage
Pendant 9 mois dans deux fûts de cognac de 350 litres, l'un avec fleur et l'autre rempli chaque semaine. Aucun bâtonnage n'est effectué et l'on recherche un élevage réducteur sur lies.
Embouteillage
Sans filtre en août 2024.

The golden-colored unfortified white 2023 La Pretensión was produced with Moscatel de Alejandría grapes from Balbaína Baja in Jerez. The full clusters fermented for a week, then were foot trodden and then aged in used 400-liter Cognac barrels with flor for nine months. I find more "orange" and skin contact here than in the other whites I tasted this time, with notes of yellow fruit, quince paste and a spirity touch, with the effect of the flor quite subtle and hidden by the effect of the skins and the wood. It's not varietal at all, despite being faintly more aromatic than its siblings. It's tasty and tender, with 12.5% alcohol and a pH of 3.4, medium-bodied, with volume and some fine tannins. 1,300 bottles produced. It was bottled in August 2024.
