Bina est la dernière création de domaine Luis Pérez, l'un des projets qui fait référence dans le cadre de Jerez. Sous la direction de Willy Pérez, ils renouent avec le style de vinification traditionnel de la région avec les vins dits « de pâturage ». Nous trouvons ici une expression pure, précise et verticale du Palomino fino de leur domaine éponyme.

The new 2023 Bina is a special plot from San Cayetano in Macharnudo, a steep 1.2 hectares of north-facing vines that were harvested early and reached a contained 10.8% alcohol with a completely different style, not showing the sun because they cannot wait to pick this plot because of the steep slope. It matured in Jerez casks for 18 months and was always topped up, but it still has the Fino character; it's concentrated and powerful but weightless, with no oak, with acidity and limestone, with lots of dry extract, crystalline and defined, with an ethereal character. A more ethereal expression of Macharnudo, it has acidity and salinity. Only 800 bottles were filled in May 2025. - Luis Gutiérrez.
