The 2017 Tío Raimundo, is a Moscatel with "velo de flor," as it reads on the label. It aged under a veil of flor yeast that give it a nutty nose and a completely different profile, fresh and citrusy. The idea was to bottle the wine that they used to bottle for themselves to drink as an aperitif. The flor is more consistent than the 2016, as the barrels were impregnated with the yeasts. The wine spent three years in those barrels, and it finished with higher alcohol through evaporation, 15.5%, keeping the freshness and a dry, chalky sensation in the texture. It finishes very dry. 1,200 bottles were filled in March 2020. This should age nicely in bottle; it feels young.
