The August 2020 bottling of the NV 1955 Pedro Ximénez Solera Cincuentenario is an intermediate step between the older and the younger sweet wines, not from the 1955 vintage but a non-vintage wine from solera, which might average 40 to 50 years of age. It's dense and concentrated, with15% alcohol and 407 grams of sugar, quite sweet. It's difficult not to lose your reference with such a concentration of sugar, as more seems better, but balance is key here. I think I liked it more than in previous occasions; I found it complex, nuanced and elegant (Belgian chocolate, the best dates money can buy, super fine expresso from Kenya...) and with a floral and very attractive note, showing concentration and old age and very precise and clean flavors that make it irresistible. This saca was composed of 264 numbered bottles, and the bottling date and bottle number are written on the label. - Luis Gutiérrez.
