L'expression « dos cortados » ou « tres cortados » désigne les marques tracées à la craie sur les fûts par le contremaître lorsqu'un fût ne suit pas la direction souhaitée pour le vin recherché. Le Palo Cortado est un vin particulier, entre l'amontillado et l'oloroso. Dos Cortados provient du Pago Balbaína, classé Jerez Superior, et se révèle vif et intense au nez, avec des notes corsées de fruits secs et de noisette. Très élégant et persistant au palais, il est extrêmement expressif

The NV Dos Cortados Palo Cortado VOS mentions on the label "Solera Especial" and that it aged for 20 years, but the average age is possibly higher; and they say that in the future it will be labeled as a VORS, over 30 years of age. It has a dark amber color with some green tints, not common at that age, and a nose with clear biological reminiscences, along with saltpeter, seaweed and rusty nails with just a generous and warm touch of peach and spirit. It has 21.5% alcohol with a low pH and high acidity through concentration, but it has a gentler palate than expected. The nose is definitely closer to an Amontillado than an Oloroso. It comes in a half-liter bottle, and they filled around 1,000 of them in 2023, but there's no mention of the bottling date or saca on the labels.
A punchy Palo Cortado with chalk, linseed oil and varnish-like aromas followed by green wood and milk chocolate flavours. Amable on the mid-palate, with a long, powerful finish. (Matthew Forster MW)
