L'avis des experts
Bright, shiny yellow-green with silver reflections and a persistent mousse. Subtle white pome fruit nuances with floral undertones on the nose, with some hints of candied orange zest, hibiscus, grapefruit and blossom honey. It's pithy and taut on the palate with a lively acidity structure supporting white apple fruit. The mineral-salty finish shows some nuances of bitterness in the aftertaste. A multi-faceted food wine. (Degorgiert 07/23, PM).
A beautiful Champagne, this citrus and white-fruited wine is tightly textured with a strong mineral character and pure acidity and freshness. The low dosage means it is dry, but the fruit contrasts well with this. Drink now.
Lemony and pristine with aspirin-like tension. Light-bodied, showing superzesty tangerine flavors with bright fruit definition and good length. It might lack complexity at the moment but is poised to develop lots of energy, elegance and nerviness. Drinkable now but best in two or three years.
A brand new cuvée, Ayala's 2018 Blanc de Blancs A18 is entirely crafted with Chardonnay sourced in the villages of Chuoilly, Cramant, Le Mesnil-sur-Oger and Oger for the grand crus and Cuis and Bisseuils for the premier crus. Revealing a delicate, sweet bouquet of jasmine, brioche, pastry, confit citrus and flowers, it's round, harmonious, moderately weighted and seamless, concluding with a chalky, delicate finish with lemon-oil inflections. Dosage: five grams per liter.
Ayala's focus on Chardonnay marks it out among the houses, and its signature vintage blanc de blancs has been relaunched from 2018 now featuring grapes from Bisseuil in the Montagne de Reims. 2018's warmth and openness has yielded a sunny, approachable blanc de blancs built on quite a prominent show of bittersweet lemon rind, white pear and juicy apricot. It's not as reductive or linear as some vintages, but still maintains a sleek, lightly creamy elegance. Chardonnay from Chouilly, Cramant, Le Mesnil-sur-Oger, Oger, Bisseuil and Cuis, vinified in stainless steel with six years on lees.
