They can only bottle 1,000 liters per year of the NV Fino Pasado, a Fino that was produced with Pedro Ximénez grapes, never fortified and aged for 14 to 16 years, taking the biological aging to an extreme, when the flor has both dead and alive yeasts and the wine is almost starting an oxidative phase on its way to becoming and Amontillado. This has a darker golden color, more amber than the other Fino bottlings and with a completely different nose. The pungent biological notes are very weak and the dominant note is of caramel, which to me is a note more from Amontillado than Fino, yeasty and a little spirity, nutty with a varnished finish. 2,000 half-liter bottles were filled in July 2024.
