Description

L'un des vins espagnols mieux notés au monde. L'Ermita est l'un des grands joyaux œnologiques du panorama espagnol, grâce auquel Álvaro Palacios a atteint les sommets en matière de reconnaissance. Un Grand Vin Sélectionné dont la production est évidemment très limitée. Exclusif, intime et harmonieux. Son auteur le définit comme « l'émotion du classicisme ». Il est intéressant de noter que son coupage comprend principalement les cépages Grenache et Samsó (Cariñena), bien qu'il contienne également un petit pourcentage de raisins blancs provenant du même vignoble.

Nez
Les notes florales dominantes sont rehaussées de touches de groseilles rouges, de fraises mûres, de violettes, d'épices douces et d'écorce de mandarine, ainsi que d'herbes sauvages et de fleurs blanches.
Bouche
Au palais, il est très élégant, frais et croquant, avec des notes abondantes de cerises rouges qui se marient aux notes minérales et savoureuses caractéristiques du terroir. Ses tanins lui confèrent une texture fine et granuleuse et la finale est très longue.
Température de service
Il est recommandé de servir à 16 °C.
Garde
À consommer de préférence jusqu'en 2040 environ, si conservé dans de bonnes conditions. Il est recommandé de le décanter.
Accord mets et vin
Ragoûts de viande, gibier à plumes et viandes rouges (côte de bœuf).

Description
Vignoble situé à Gratallops, avec des pentes très prononcées et une exposition nord et est. Situé entre 400 et 500 mètres d'altitude. Débourrement à partir du 22 mars, floraison à partir du 5 juin et véraison à partir du 14 juillet.
Size
4,7 hectares.
Année de plantation
Entre 85 et 105 ans.
Sol
D'ardoise (llicorella) à structure laminaire, disposée verticalement et obliquement. La parcelle se caractérise par un fil diagonal de roche gréseuse.
Climat
Continental avec influence méditerranéenne. Ce millésime a été marqué par la sécheresse, avec des précipitations de 250 litres entre novembre 2022 et octobre 2023. Au cours des mois de printemps, seuls 43 litres sont tombés. Pour cette raison, et pour la première fois dans l'histoire, il a été nécessaire de recourir à des techniques d'irrigation précises dans les zones à faible absorption d'eau.
Vendanges
La Vendange manuelle a eu lieu les 5, 6, 9 et 11 octobre.
Vinification
égrappage à 100 % et foulage doux. Fermentation alcoolique dans de petites cuves en bois avec pigeage. Macération pendant environ 45 jours. Fermentation malolactique spontanée en barriques.
Elevage
Rouge crianza en foudres ovales de chêne français pendant 13 mois, puis deux mois supplémentaires en cuve béton.

L'avis des experts

Decanter:

The aromas are delightfully floral, laden with redcurrants and tangerine peel, plus wild herbs and white flowers. Nothing is overdone here – it's so elegant. In the mouth it's fresh and crisp with abundant red cherries, run through with the savoury, mineral notes of the terroir. The tannins add fine texture and grain, and there is a superbly long finish. This really is a wine to meditate over. 84% Garnacha, 13% Cariñena with seasonings of Picapoll and white varieties. A joy from beginning to end, with a glorious future ahead. It's often difficult to approach the great wines with a fair mind, but L’Ermita charms from the first.

The Wine Advocate:

The "gran vinya classificada" single-vineyard 2023 L'Ermita was also bottled and singing. From the 4.7 hectares of the vineyard, they selected four for this vintage, with a blend of 84% Garnacha, 13% Cariñena, 2% Picapoll and 1% white grapes, Garnacha Blanca, Macabeo and PX. It fermented with part of full clusters and indigenous yeasts in oak vats with a longer maceration than in 2022, a total of 42 days, followed by an élevage in French oak oval foudres of 13 months and two more months in concrete. Last year, I found it darker, earthier and a little more rustic than the 2022 wine, but it has bloomed since then. It's much more ethereal and floral, with notes of fresh grape pulp, and it has contained energy, interwoven with spices. This is now somewhere in between the more perfumed and ethereal wines like Dofi and La Baixada and the earthier, darker and more powerful like La Baixada. 4,730 bottles were filled in February 2025. Tim Atkin:

Deep, soulful and really, quite a moving wine. Ripe, earthy strawberries, licorice, wild herbs, graphite and the slightest touch of toasted wood, perfectly integrated into the whole. This is a special wine in every vintage, but it feels like it has a touch more this year. Remarkable. 2024-2044

James Suckling:

Very good depth for a rather delicate, nuanced red from a blisteringly hot and dry year, showing violets, ripe strawberries, blueberries, sweet spices and minerals on the nose. A touch of white pepper as well. The extraction must have been kept low to keep the finesse and fine-grained tannins. Fine mineral tension in the middle. Drink from 2027.
