100% issu de Baboso negro (cépage autochtone des îles Canaries), Los Pasitos est le pari réussi du domaine Suertes del Marqués de créer un vin au profil plus frais que ce qui se fait habituellement sur l’île d’El Hierro. De tous les vins du domaine c'est peut-être le plus corpulent, le plus intense en couleur, en profondeur et en puissance, mais on retrouvera en lui avec bonheur ce profil atlantique très marqué, dans lequel l'acidité est le véritable axe central du vin.

"The 2014 Los Pasitos is produced with the grapes of eight-year-old Baboso Negro (Alfrocheiro Preto) vines planted at high density (6,300 plants per hectare) in the parcel known as Los Pasitos; thy are fermented in open plastic bins with 20% full clusters and indigenous yeasts. The wine matured in well-seasoned, 228- and 500-liter French oak barrels for some 14 months. This feels fresher and better balanced that previous vintages. Baboso Negro is a grape that is very sensitive about the harvesting date and can go from green to overripe in a matter of a couple of days. There is a slight lactic character and they confirmed the grapes had higher malic acid in 2014, but they don't know if it's because it's a young vineyard or because the variety is like that. Don't get me wrong, the floral character, the wet pumice aromas and the spicy profile of Tenerife is still there big time, and the faint lactic note is only noticeable because I'm tasting it next to the others. It also has a slightly fuller palate, but at the same time, it has much better acidity than previous vintages. My favorite Los Pasitos so far... because I previewed the 2015, which promises to be even better! Only 960 bottle produced and filled in January 2016."
