Calabres is the name of the local strain of Garnacha in the Sierra de Francia, and it's the grape found in the 2017 La Pivonera, sourced from a vineyard planted in 1920 on sandy granite soils at 800 meters in altitude in the village of San Esteban de la Sierra. It fermented with indigenous yeasts and matured in a 300-liter French barrique for ten months. It shows very aromatic and floral, with the ripeness of the year coming out after some time in the glass. The balance comes from the altitude, which compensates for Garnacha's tendency to get ripe. It has a lively palate with electric freshness, fluid, with gentle tannins and good acidity. It has a recognizable varietal profile and the granite sensation, as well as some similarities with some wines from Gredos. Only 400 bottles were produced.
