"I make it like a red wine," says Roberto Oliván of this three-way assemblage of mostly Jaén Blanco with Viura and Calagraño, leaving it for 90 days on skins. The result is a dense, slightly tannic white with low alcohol, lots of texture and interest, an alluring bitterness and a taut, tangy, mouth-watering finish. A very unusual white Rioja. 2020-23
