Jalifa Amontillado Solera Especial VORS 50 cl

The NV Jalifa Rare Old Dry Amontillado Solera Especial VORS is a brand from the Sanlúcar time of the winery, so it has a Manzanilla origin, but they had to start refreshing it with Fino because Jerez and Manzanilla are two separate appellations. It is now in half-liter bottles, and each bottling has the bottling date on the back label (18208 in this case, so day 208 of the year 2018). This has some nine years of biological aging and a much longer time aged in an oxidative way, and even though it has a saline/biological touch, the oxidative phase tends to dominate the character, keeping the finesse of an Amontillado.
