Description
Pastora est un manzanilla d'élevage biologique long (vieillissement en fût sous une couche de levure formée naturellement). Il puise ses racines dans les soleras (systèmes de fûts empilés permettant le transvasement du vin de fût à fût) de Solear, où elle occupe un espace très précis dans le chai La Pastora, situé sur la butte qui sépare les quartiers hauts des quartiers bas de la ville de Sanlúcar et orienté vers le fleuve. Ces conditions d'élevage lui permettent d'être toujours pleine de vie avec déjà 9 ans d'âge. Captivant, ce Manzanilla Pasada déploie un nez intense riche en arômes de levure et une saveur caractéristique de noix et de camomille. Il a obtenu la plus haute notation (Platinum Best in Show) aux Decanter World Wine Awards 2017.

"There is a new Manzanilla from the masters of the style, the first new brand they release since they revolutionized the marked with their 'en rama' bottling. The NV Manzanilla Pasada en Rama Pastora differs from the Solear en Rama exclusively in the winery where the wine is aged, as it's bottled at a similar age, around nine years, and bottled untouched. This Manzanilla ages in the Pastora winery, but the wine is the same as the Solear. They are looking for a similar wine as the Solear en Rama and it is quite similar, but not exactly the same; the wine here feels a tad heavier, with more shoulders, a little wider in the palate. It's a matter of details. They will produce some 10,000 bottles per year in different lots, but the back label will mention the year of the bottling (and if you're into deciphering codes, L16-046, the lot, will tell you the day it was bottled)."
Appetising concentrated nose showing characterful fruit, orange skin, white flowers, and intense nutty aromas; a rich palate, complex, with lots of apples and a touch of sweet miso. Delicate and open, with long finish, a gorgeous manzanilla.
