Vignoble et élaboration

Description
Vignoble de vieux cépages en secano (culture sans irrigation) conduits en gobelet.
Sol
Argilo-calcaire et caillouteux.
Vendanges
Vendange manuelle dans des caisses de 15 kilos.
Vinification
Raisin partiellement égrappé sur un fond de grappes entières. Fermentation alcoolique dans des cuves inox avec des levures indigènes et pigeage quotidien à la main. Pressurage manuel et transfert dans des cuves inox, où la fermentation malolactique a eu lieu.
Elevage
Rouge crianza élevé en vieux fûts de chêne français pendant 11 mois.
Embouteillage
Vin non filtré, clarifié par décantation naturelle. Sans additifs, sauf une dose minimale de soufre. Mise en bouteille le 12 juin 2023.

There is a new wine from two plots of old Garnacha in the village of Muruzabal, the two northernmost plots they have, planted with some Garnacha Gris intermixed with the red. The 2021 Camino de Auritz has been fermented separately since 2018, but it was bottled on its own for the first time in 2021. They always found it to be different; and in 2021, the ripeness was through, and the wine finished with 14.5% alcohol and a more Mediterranean profile than the 2022 I tasted next to it, with a darker color and darker berry fruit too. They used 50% full clusters for the fermentation, and the wine matured in French oak barrels for 11 months. Only 613 bottles produced. it was bottled in June 2023.
