The 2021 Taté was produced from traditional vineyards planted with mixed red varieties of 70+-year-old vines on terraces from the valley of As Ermitas on the banks of the Bibei River in the village of O Bolo in Valdeorras. It fermented with 55% full clusters and indigenous yeasts with a maceration of 43 days in stainless steel; then the wine matured in 500-liter French oak barrels for 12 months, followed by five more months in stainless steel. It has the wild profile of the As Ermitas zone, the field blend and the depth and complexity of the old vines. In this cooler year, the wine has more tension, fine minerality and a long, tasty finish. 1,505 bottles were filled in May 2023.
