Young Chilean winemaker Diego Ríos is making some fantastic wines at this Vilanova de Arousa bodega. Don Álvaro hails from classic sand and granite soils and spends 30 months on lees in stainless steel before bottling. Saline, spicy and intense, with good concentration, yeasty, bready complexity and the structure to age further in bottle. 2022-27
