The Wine Advocate:

The 2021 Las Mercedes follows the path of elegance of this wine from pure Palomino from the pago Añina in Jerez with some reductive aromas, a touch of gunpowder, austere and mineral. It has a lean palate with 11.5% alcohol and a pH of 3.1, which gives an austere mouthfeel with lots of chalkiness. It's very dry. I loved it. It fermented in bota and matured with flor for some six months. 3,500 bottles were filled in April 2022.
