This sparkling rosé was produced by the ancestral method of finishing fermentation in bottle. The 2019 Les Danses was kept in bottle for almost 30 months before being disgorged. The front label says Blanc de Mandó, as it's produced as a blanc de noirs, with almost no maceration, with no press wine and a faint pink color. 2019 was a very challenging harvest in the zone, with 300 liters of rain in only three days during the second half of the harvest, and delivered lower alcohol and good acidity. The wine has 11.5% alcohol and a pH of 2.99, keeping 6.1 grams of residual sugar. It's more fruit-driven and has small bubbles and a good balance between the acidity and the sugar, which goes unnoticeable. It's young and tasty. They will disgorge another batch at 37 months. 4,000 bottles produced.
