They came to the conclusion for their 2018 Grimalt/Caballero that less is more, and simple things have a complex and long process. So, for this blend of Callet and Fogoneu, they do a simple vinification in stainless steel with indigenous yeasts and an élevage of 14 months in 600-liter oak barrels. It has a bright ruby color and is incredibly aromatic, floral, peppery and nuanced, clean and focused like never before. It's terribly elegant, balanced, intense and somehow light, with 12% alcohol and super fine tannins. It's a cool Mediterranean red, among the best produced in Spain. It opened up spectacularly in the glass, the floral and spicy character grew and the wine didn't stop unfolding layers of aromas. The flavors are pungent, high pitched, precise and clean. There is a lot of tension here, the texture is seamless and the finish long, clean and focused. Simply superb! Only 600 bottles from two small plots were filled in December 2019.
