"The 2015 7 Fuentes, their entry-level village red from a forward vintage, is mostly Listán Negro with some 10% Castellana Negra grapes sourced from 25 different vineyards of different ages, ranging between ten and 200 years of age, mostly in the central and east part of the Valle de la Orotava where there are more red than white grapes. The vineyards are planted at different altitudes, also comprising a wide range, 300 to 700 meters above sea level. It was fermented mostly in concrete with no more than 5% stems and aged for nine months before bottling, 60% of the volume in the concrete tanks and the rest in used 500-liter oak barrels. This is very much in line with the 2014 and has had time to settle in bottle. It's the textbook volcanic Listán Negro character, with the black peppercorns, dry roses and wet pumice. The palate is approachable, with great freshness and length. 56,000 bottles produced. Bottling was in August 2016."
