The Wine Advocate:

The captivating 2019 Hipperia is a blend of 66% Cabernet Sauvignon, 21% Cabernet Franc, 10% Merlot and 3% Petit Verdot with 14.66% alcohol, lower than the majority of reds. It fermented in stainless steel with selected yeasts and added lactic bacteria so that the wine had finished malolactic by November when it was put in new 225-liter French oak barrels, where it matured for 18 months. The blend is done with the help of consultant Eric Boissenot. There is a richness and juiciness here that is very attractive, and the wine is full-bodied and peppery, with abundant tannins and generous oak. 16,141 bottles were filled in July 2021.
