As it happens in the old vineyards, there is some 2% Torrontés Volcánico interplanted with the Listán Blanco in the centenary cordón trenzado plots used for the white 2018 Trenzado. It fermented in used 500-liter barrels, a third use 4,500-liter foudre and two new 2,500-liter foudres with indigenous yeasts, followed by an élevage of nine months. This has a much more developed nose than the 2019, though the initial reduction has disappeared; the wine is expressive and open, somewhat medicinal, giving it a more oxidative twist that can remind you of some unfortified wines from Jerez. It's more about the soil than fruit. The palate is austere, with a lively texture, and is vibrant but not exuberant. This goes in line with the sharper 2016 and 2019 could remind you of 2017. 14,000 bottles were filled in July 2019.
