There are different grape varieties called Albillo, and the one in Gredos is Albillo Real, which produced the 2017 La Viña de Ayer Albillo, from a variety that has moderate acidity, so they thought they could do some skin contact, destemmed but fermented with skins and indigenous yeasts. It has a golden color (the white is much darker than the rosé, and the white is fermented as a red!), and it resulted in a nutty white, with notes of yellow plums and quince with a slightly tannic palate, with some influence from some flor that tends to grow very easily on Albillo. The tannins seem to replace acidity, in the style of a white from the Rhône. Experiment with white meat. 5,000 bottles were filled in May 2018.
