The 2019 El Chibirique comes from one of the estate-owned plots that gets bottled separately; it's a centenary cordón trenzado vineyard at 380 to 420 meters in altitude on clay-rich soils that form an amphitheater with a north and east exposition. It fermented in concrete with full clusters and indigenous yeasts and matured in used 500-liter oak barrels (instead of 2,500-liter oak foudre because of the volume) for 11 months. I found some balsamic, medicinal and spicy notes of cloves, pungent and with somewhat dusty tannins. 2,200 bottles were filled in November 2021.

Muy mineral, de color, sabor y aromas particulares. No se parece a nada hecho en la peninsula.
