Surely one of the best value white wines in Spain. This is a seriously complex Macabeo from 20–55 year old vines. The wine is aged in concrete on lees for 18 months which brings volume and a slightly waxy texture. There is lemon peel, green apple and fresh mountain aromas with elegant acidity and a saline finish. Subtle and complex, this is a crowd pleaser of exceptional quality. 2024-2026.

The white 2021 Cutio Macabeo was produced with Macabeo grapes from three plots of 40-year-old head-pruned and dry-farmed vines on clay and limestone soils at 650 meters in altitude in the village of Almonacid de la Sierra. It had some skin contact, fermented in stainless steel with indigenous yeasts and matured with the lees that were not stirred in underground epoxy-lined concrete vats for 12 months. It's floral, with notes of pollen, chamomile, fennel and herbs, with a core of minerality that makes it very serious. It has freshness and balance, good ripeness and 13.5% alcohol, keeping a pH of 3.22 and 6.55 grams of acidity through not putting the wine through malolactic fermentation to keep the malic acid from the grapes (which is not very high anyway). 12,000 bottles produced. It was bottled in January 2023.
