It's hard to choose between the terrific Fôret and the equally compelling 2017 Chablis 1er Cru Fourchaume, a striking wine that unfurls to reveal aromas of peach, Meyer lemon, dried white flowers, oyster shell and pastry cream. On the palate, it's medium to full-bodied, expansive and satiny, with a crisp but fleshy core, excellent acidity and a broader, more muscular profile than the Fôret, concluding with a saline and mouthwatering finish.
