"2003 was the last vintage of biological aging that had a second fortification, as Paola Medina realized it was not necessary to do so to make the transition to Amontillado. So the last wine in this style is the 2003 Colección Añadas Amontillado en Rama, which aged under flor until 2011, and from 2011 until now was fully topped up after a second fortification. This is still a young Amontillado with the biological phase very marked in this bottling from June 2016. The palate is sharp, very tasty, with a chalky texture and a salty finish."
