"2007 was a very cold vintage, almost the opposite of the 2012, and the 2007 Colección Añadas Fino en Rama Tiento is a special bottling that is marked with the name of a style of flamenco (Tiento in this case), and this is special because they selected a couple of barrels that after ten years still had healthy flor. They decided to blend those barrels and bottle them as a special edition, so there won't be any more bottlings of this. This is a specially fine and sharp Fino, with a fresher character, delicate and without the oxidative notes often found in single-harvest biological wines. This is a wine that will improve in bottle, as it's quite atypical because it has a very high acidity (6.7 grams). 1,100 500-milliliter bottles were filled in May 2017."
