Tosca Cerrada 2015

"The 2015 Tosca Cerrada is pure Palomino matured in stainless steel under flor for 15 months and then put in Jerez botas for a further five to seven months before being bottled. There is one lot bottled directly from the stainless steel in February 2017 without going through the cask to see how it evolves in bottle—a search for what's between flor and fruit. I also re-tasted the 2014 from the last bottling and the wine is evolving very nicely in bottle."
