"I decided to merge all the saca non-vintage wines into one instead of creating brand new wines for each year's bottlings, and I tasted two different NV Tío Pepe Fino en Rama, starting with the 2016 bottling which wears a green label and was selected from 60 botas of the solera Tío Pepe Rebollo and Tío Pepe Constancia. It was bottled in April 2016 and has had some time in bottle. The differences between these bottlings are subtle and possibly not as big as with vintage wines, as the idea of the solera is to homogenize the wines and present a common profile. This combines power with elegance, a clear step up in complexity and depth compared with the regular Tío Pepe. Each year is presented with a new label from the collection of old labels from the winery. This is a commercial success, a medium-age textbook Fino with an average age of four years when bottled, with plenty of character as it's en rama. 16,900 bottles produced."
