"I saw Raul Bobet disgorge a bottle of the 2013 Taïka, a sparkling wine produced with the ancestral method with approximately half and half Sauvignon Blanc and Semillon. The idea is to keep the wine some three years in the bottle, and it should be disgorged around October 2016. I tasted this 2013 vintage with and without the liqueur d'expedition, a low dosage provided by a sweet Semillon with some 170 grams of sugar that will leave the wine with some 1.5 grams of sugar, very low. However, I ended up preferring the sample without anything, which was sharp and bone dry, a little aggressive for some, because of its marked acidity. 2013 is a lot higher in acidity, a much cooler year than 2012, more elegant, with more of a distinct character with marked personality, and the effect of the lees is a lot less evident. It's really gorgeous, and I think it can turn into something really beautiful in bottle. The wine will be disgorged in October and I tasted it in mid July. Some 2,500 bottles."
