The 2016 Pai is an Albariño that Xurxo Alba Padín makes by blending different wines to achieve a more gentle white with integrated acidity and a little more volume. Each year he makes a different blend using various lots with or without malolactic and with or without oak to get the balance and weight they are looking for. Despite the natural tendency of the year to deliver rounder wines, this is a very fresh and elegant wine with varietal character—white flowers and the granite soils shine through in the texture. 10,000 bottles produced.
