The last of the bottlings they did of the 2010 Fino in January 2019 is called 2010 Colección Añadas Fino en Rama, a selection from all the barrels they saw that were at the limit of biological aging. When they do a wine like that, they always add the name of a style of flamenco to the name of the wine, and in this case, they called it Jaleo. We have to realize that when a biological wine is not blended with younger wines, which is what happens in a solera, the wine tends to age much faster. This will be the last bottling of this wine, as it is already losing its flor, so it will soon turn into an Amontillado. This is delicious. There are 2,000 bottles of this. They did some past bottlings of the 2010, usually selected barrels, but apparently this one is completely different. It seems like the blend of all the barrels has brought very good complexity and nuance, taking biological aging to an extreme with even a touch of nuts denoting some oxidation, wine with superb class combining power with finesse and a sharp palate. It seems like the flor was reactivated before it was bottled, compensating a more oxidative phase it had gone through before, and the wine was 16% alcohol. This is superb, and reminded me of the superb Panesa from Emilio Hidalgo, a very old and complex Fino.
