"The so called NV Manzanilla Madura is bottled after some six years under flor, a classical Manzanilla fermented at higher temperature than the average winery, trying to escape the fruit and in search of more structured wines (that's also why they select the musts from Jerez rather than Sanlúcar). In fact, the wine has a structure that is closer to a fino than a manzanilla, with more body and less verticality. A Manzanilla with muscle. 12,000 bottles produced."
