The full carbonic maceration red 2019 31 Noviembre is a blend of 70% Garnacha and 30% Cencibel (Tempranillo) from organically farmed vines produced in the tradition of the Rioja Alavesa: fermented with full clusters in stainless steel followed by malolactic in concrete vats. It's juicy, chewy and aromatic, with a mixture of floral and berry aromas, and it has a soft palate with round tannins that make it very approachable. This is released very early, at the end of November. 5,000 bottles were filled in November 2019.
