"I also had two vintages to taste of their top white, a Listán Blanco (Palomino) varietal from an ancient vineyard in the Las Suertes zone of La Orotava on clay soils and trained in the cordón trenzado system, the first of which was the 2015 Vidonia. The must fermented in used 500-liter oak casks after two days in stainless steel with indigenous yeasts. It matured in those barrels for ten months before bottling. The vintage comparison is very similar to what I saw in Trenzado. The nose of this 2015 is super expressive and exotic, with plenty of white pepper, quince, some ash and some marzipan and custard, somehow reminiscent of a white Hermitage. This is a more powerful version of Trenzado, waxy but at the same time very stony. This feels like a very complete Vidonia—one I'd love to see at age ten. 4,800 bottles were filled in September 2016."
